Eggs
I think my brother will be proud of me. I successfully prepared two servings of Toad in the Hole for Tim’s and my breakfast! Michael usually makes this for me and I have had a time trying myself.
Last night Runaway Bride was on tv and near the end she fixes about 10 different egg dishes and learns she loves Eggs Benedict (I like that one too) but hates the rest. I was thinking about it and thought I didn’t have a favorite but I think TitH is mine. It’s yummy but has always been a treat because Michael would fix it for me on special occasions or just because.
The bread has to be nicely toasted but the yoke should be runny enough to be soaked up the bread. It can be tricky making two because you are likely making the first while the pan is still heating up, but the second is cooking in a hot pan and you risk cooking as long as the first when it doesn’t need as much time. The hole doesn’t have to be wasted. Equally toasted, it’s fine on it’s own or good for lapping up last remnants of egg.
I’m very happy.
